Ingredients

Pie Base

  • 1 homemade or store bought pie crust

Berry Filling

  • 2 cups frozen raspberries
  • 2 cups frozen blackberries
  • 2 cups frozen blueberries
  • ¾ cup sugar
  • ¼ cup cornstarch

Crumb Topping

  • 1 ¼ cups flour
  • 1 teaspoon baking powder
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup (1 stick) butter, melted


Instructions

  1. Thaw Berries: Place the frozen raspberries, blackberries, and blueberries in a colander over a large bowl and allow them to thaw completely, letting the juices collect in the bowl beneath.
  2. Prepare Crumb Topping: In a medium bowl, combine flour, baking powder, brown sugar, and cinnamon. Stir in the melted butter until the mixture forms a crumbly topping. Set aside.
  3. Prepare Pie Crust: Line a 9-inch pie plate with the pie crust. Refrigerate the crust while you prepare the filling and topping to keep it firm.
  4. Preheat Oven: Preheat your oven to 375ºF (190ºC) to get ready for baking.
  5. Cook Some Berries: Take one cup of the thawed berry mixture and add it to a saucepan along with the sugar. Cook over low heat until the mixture starts to boil, releasing the flavors.
  6. Thicken the Filling: Mix the cornstarch with a couple of tablespoons of water to make a slurry. Add the slurry and about half a cup of the berry juices collected in the bowl to the saucepan. Bring to a boil and cook until the filling thickens and becomes clear.
  7. Combine Filling: Pour the remaining berries from the colander into a bowl, then mix the thickened berry mixture and juices into the thawed berries. Stir gently to combine.

  9. Bake the Pie: Bake the pie at 375ºF for 15 minutes. Then, reduce the temperature to 350ºF (175ºC) and bake for an additional 45 minutes or until the filling is bubbling and the topping is golden. If the topping begins to get too dark, cover the pie loosely with foil.
