Description

A refreshing and vibrant Raspberry Mojito cocktail featuring muddled fresh mint, lime, and raspberries combined with sparkling water and white rum. This easy-to-make drink is perfect for quick summer gatherings or an elegant evening treat, offering a balance of sweet, tart, and minty flavors in every sip.

Ingredients

Mint and Lime Base

  • 20 mint leaves
  • 1 lime (cut into 6 wedges)
  • ¼ cup sugar (can be reduced to 2-3 tablespoons, to taste)

Fruit

  • 6 oz fresh raspberries

Liquid and Ice

  • 1 cup ice cubes
  • 8-12 oz sparkling water (club soda or seltzer)
  • 2 shots white rum (3 oz total; can use less, about 1 oz per drink)

Instructions

  1. Muddle Mint, Lime, and Sugar: Muddle together the mint leaves, 2 lime wedges, and 2 tablespoons of sugar in each glass. Bruise the mint leaves to release their flavor, squeeze the lime juice, and press the lime skin to release essential oils for enhanced aroma and taste.
  2. Add and Muddle Raspberries: Divide the raspberries between the two glasses, reserving a few for garnish if desired. Muddle the raspberries thoroughly to crush them and release their pulp, which will infuse the drink with rich flavor and texture.
  3. Assemble the Drink: Divide the ice cubes and sparkling water evenly between the two glasses. Add one shot of white rum to each glass. Stir gently to combine the raspberries and rum throughout the drink. Serve immediately and enjoy the refreshing Raspberry Mojitos.

Notes

  • Sugar amount can be adjusted to taste, reducing if you prefer a less sweet cocktail.
  • Reserve a few raspberries for garnish to enhance presentation.
  • Use freshly squeezed lime for the best flavor and aroma.
  • Adjust the amount of rum according to personal preference or desired strength.
  • For a non-alcoholic version, omit the rum and replace sparkling water with flavored soda if preferred.
