Ingredients

Noodles and Sauce

  • 8 oz rice noodles (Thai medium rice noodles preferred)
  • 2 tbsp avocado oil (divided, or any neutral flavored oil)
  • 1 shallot, sliced
  • 6 garlic cloves, minced
  • 1 tsp red pepper flakes (adjust to taste)
  • 1/4 cup tamari sauce (or soy sauce)
  • 1 tbsp brown sugar (or coconut sugar)
  • 1 tbsp gochujang (Korean chili paste)

Vegetables

  • 8 baby bok choy, halved
  • 2 tsp avocado oil (for roasting)
  • Salt and pepper to taste

Soft Boiled Eggs (Optional)

  • 4 eggs
  • 1 tbsp vinegar
  • 1 tsp sea salt

Garnish

  • Sliced green onions
  • Sesame seeds


Instructions

  1. Roast the Bok Choy: Preheat your oven to 400°F (200°C). Place the halved bok choy on a baking sheet and toss with 2 tsp avocado oil, salt, and pepper. Roast for 15 minutes, flipping halfway through until tender and slightly caramelized. Remove and set aside.
  2. Prepare Soft Boiled Eggs (Optional): In a saucepan, bring water to a boil and stir in vinegar and sea salt. Carefully add the eggs, reduce to a simmer, and cook for 6 minutes for soft boiled eggs. Immediately transfer the eggs to an ice bath to cool for 5 minutes. Peel gently to avoid damage and set aside.
  3. Cook Noodles: Bring a large pot of water to a boil. Cook the rice noodles according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
  4. Sauté Aromatics: In a large skillet over medium heat, heat 1 tbsp avocado oil. Add sliced shallots and sauté for 3-4 minutes until softened.
  5. Add Garlic and Red Pepper Flakes: Add minced garlic and red pepper flakes to the skillet and stir for about 1 minute until fragrant to build the spice foundation.
  6. Make the Sauce: Add the remaining 1 tbsp avocado oil, tamari sauce, brown sugar, and gochujang to the skillet. Stir well to combine all ingredients into a flavorful sauce.
  7. Toss Noodles in Sauce: Add the cooked noodles to the skillet and toss thoroughly to coat the noodles evenly with the spicy garlic sauce. Heat through for a couple of minutes.
  8. Serve: Plate the noodles and garnish with sliced green onions and sesame seeds. Top with roasted bok choy and halved soft boiled eggs if using, for a complete and satisfying meal.
