- 1/2 cup (120 ml) milk, plus up to 2 tablespoons (30 ml) additional as needed
- 3/4 cup (85 g) grated sharp cheddar cheese (orange-colored)
- 1/8 to 1/4 teaspoon fine salt
- Cayenne pepper, to taste
Instructions
- Make the Roux: Melt the butter in a small saucepan over medium heat. Add the flour and cook for about 1 minute, stirring constantly with a spatula to form a smooth paste without browning.
- Add Milk Gradually: Whisk in half of the milk (approximately 1/4 cup) and cook the mixture until it slightly thickens. Gradually add the remaining 1/4 cup of milk, stirring continuously, until a creamy sauce forms, about 1 to 3 minutes.
- Melt the Cheese: Lower the heat to low and stir in the grated cheese until completely melted and smooth. If the dip appears too thick, add up to 2 tablespoons more milk to reach the desired consistency.
- Season: Season the dip with fine salt and cayenne pepper to taste, stirring to combine evenly.
