  • 1/8 to 1/4 teaspoon fine salt
  • Cayenne pepper, to taste


Instructions

  1. Make the Roux: Melt the butter in a small saucepan over medium heat. Add the flour and cook for about 1 minute, stirring constantly with a spatula to form a smooth paste without browning.
  2. Add Milk Gradually: Whisk in half of the milk (approximately 1/4 cup) and cook the mixture until it slightly thickens. Gradually add the remaining 1/4 cup of milk, stirring continuously, until a creamy sauce forms, about 1 to 3 minutes.
  3. Melt the Cheese: Lower the heat to low and stir in the grated cheese until completely melted and smooth. If the dip appears too thick, add up to 2 tablespoons more milk to reach the desired consistency.
