Ingredients

Pickled Quail Eggs

  • 12 quail eggs
  • 1 1/2 cups water
  • 1/2 cup apple cider vinegar
  • 1 tsp salt
  • 2 garlic cloves, whole peeled
  • 1/2 tbsp turmeric powder
  • 1/4 cup brown sugar

Chorizo Coating

  • 12 oz raw Mexican chorizo sausage (casing removed if using links)
  • 1 cup seasoned Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten
  • Canola oil, for frying

Harissa Cream Sauce

  • 2 tbsp mayonnaise
  • 2 tbsp sour cream
  • 2 tbsp harissa paste
  • 1/2 tsp apple cider vinegar


Instructions

  1. Pickle the Eggs: Place quail eggs in a small saucepan and cover with water. Bring to a boil over medium-high heat, then simmer on medium-low for 5 minutes. Transfer eggs to an ice bath to cool completely. Carefully peel the eggs using a paring knife to loosen shells.
  2. Prepare the Brine: In the same saucepan, combine apple cider vinegar, water, salt, garlic, turmeric, and brown sugar. Bring to a boil and stir until sugar and salt dissolve. Cool to room temperature, then pour brine over peeled eggs in an airtight container. Refrigerate for 3 days, turning jar slightly daily to distribute brine.
  3. Prepare the Chorizo Layer: Remove casing from chorizo if necessary. Wet your hands and press the sausage evenly into a 1/8" thick rectangle about 9"x12" on parchment paper. Cut into 12 squares (4 horizontally, 3 vertically).
  4. Wrap Eggs with Chorizo: Place one pickled egg on each sausage square. Carefully lift each square and wrap the sausage around the egg, pressing edges to seal and rolling in your hands until smooth like a meatball. Repeat for all eggs.
  5. Dredge the Scotch Eggs: Set up a dredging station with beaten eggs in one bowl and combined Parmesan and Panko breadcrumbs in another. Coat each chorizo-wrapped egg first in the breadcrumb mixture, then dip into beaten eggs, and finally coat again with the breadcrumb mixture. Place on a clean plate.

  7. Heat Oil for Frying: Pour 1/4" canola oil into a large, deep frying pan. Heat over medium-high for 3-5 minutes until shimmering but not smoking.
  8. Fry Scotch Eggs: Fry eggs in batches without overcrowding. Cook 2 minutes per side, turning carefully with tongs to brown all four sides. Transfer fried eggs to the oven-safe rack to drain.
  9. Finish Cooking in Oven: Place the sheet pan with rack and eggs in the oven for 10-15 minutes to fully cook the sausage. Eggs should be firm and browned when done.
  10. Cool the Eggs: Remove from oven and let cool for at least 15 minutes before slicing or serving. They can be enjoyed warm or at room temperature.
  11. Make Harissa Cream Sauce: Whisk together mayonnaise, sour cream, harissa paste, and apple cider vinegar until smooth and well combined.
  12. Serve: Slice Scotch eggs in half and arrange on a platter. Serve with the harissa cream sauce on the side.
  13. Optional Air Frying Method: Spray prepared and dredged eggs evenly with cooking spray. Preheat air fryer to 380°F for 5 minutes. Cook eggs for 10 minutes, flipping halfway through. Cool, slice, and serve.
