Description

This creamy and flavorful Pistachio Hummus is a delightful twist on the classic Middle Eastern dip, blending roasted salted pistachios with garbanzo beans, tahini, and spices. Ready in just 10 minutes, it's perfect as a healthy snack, appetizer, or party dip, garnished with fresh parsley and extra pistachios for texture.

Ingredients

Hummus Ingredients

  • ¾ cup roasted and salted pistachios
  • 2 (15-ounce) cans garbanzo beans, drained (reserve the liquid from 1 can)
  • 2 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 2 tablespoons tahini (or more to taste)
  • ½ lemon, juiced
  • 3 garlic cloves
  • 1 heaping cup of ice

Garnish

  • 1 tablespoon chopped parsley
  • Crushed pistachios (optional, for added texture)

Instructions

  1. Combine pistachios and liquids: In a food processor, add the roasted salted pistachios, the reserved liquid from one can of garbanzo beans, and olive oil. Blend on high speed for 1 minute until the mixture becomes smooth.
  2. Add remaining ingredients: To the smoothie base, add the drained garbanzo beans, cumin, tahini, lemon juice, garlic cloves, and ice. Blend for 1 to 2 minutes, pausing occasionally to scrape down the sides to ensure everything is evenly incorporated and creamy. Taste and adjust seasoning or tahini quantity as desired.
  3. Serve and garnish: Transfer the pistachio hummus to a serving dish. Garnish with chopped parsley and a sprinkle of crushed pistachios to enhance both flavor and texture. Serve immediately or refrigerate for later use.

Notes

  • Reserve the liquid from one can of garbanzo beans to help achieve a creamy consistency without using water.
  • Adjust the amount of tahini to your taste preference for creaminess and flavor.
  • If you prefer a smoother hummus, blend for a longer time until the desired texture is reached.
  • This hummus can be refrigerated in an airtight container for up to 3 days.
  • Roasted salted pistachios add a savory flavor, but you can use unsalted if you want to control saltiness better.
