Description
A refreshing and vibrant Pineapple Hibiscus Mocktail made with fresh ginger syrup, steeped hibiscus petals, and fresh pineapple juice, garnished with cilantro for a fragrant, tropical non-alcoholic beverage perfect for warm days or anytime you want a flavorful, healthy drink.
Ingredients
Ginger Syrup
- 2" piece of fresh ginger
- 1/4 cup sugar
- 1/4 cup water
Hibiscus Tea
- 1/4 cup dried hibiscus petals (also called jamaica flowers)
- 2 cups water
Juice & Garnish
- 1/2 fresh pineapple, peeled and cored
- 2 fresh cilantro sprigs
Instructions
- Prepare Ginger Syrup: Peel the ginger and slice it into very thin rounds. Smash the slices lightly with the end of a knife to release more flavor. Place them in a small saucepan, cover with sugar and 1/4 cup water. Bring to a boil, then reduce heat and simmer, covered, for 10 minutes until the mixture is fragrant. Remove from heat and let cool.
- Steep Hibiscus Tea: Bring the remaining 2 cups of water to a boil. Once boiling, remove from heat and add the dried hibiscus petals. Cover and let steep for 15 minutes. Strain the hibiscus tea and let it cool. Be careful as the hibiscus liquid can stain surfaces.
- Prepare Pineapple Juice: Juice the pineapple using a juicer or blend chopped pineapple in a blender and strain through a fine mesh sieve to remove pulp. Alternatively, use store-bought pineapple juice if preferred.
- Assemble the Mocktail: Strain the ginger syrup to remove ginger pieces and divide it evenly between two tall glasses filled with ice cubes. Add equal parts pineapple juice and hibiscus tea to each glass.
- Garnish and Serve: Lightly bruise the cilantro sprigs with the side of a knife to release their aroma and add them to each glass. Serve immediately and enjoy a refreshing tropical drink.
Notes
- The hibiscus steeping liquid may stain countertops and clothing, so handle with care.
- You can prepare the ginger syrup and hibiscus tea ahead of time and refrigerate to save time.
- Store-bought pineapple juice can be used as a convenient shortcut.
- Adjust the amount of sugar in the syrup to taste if you prefer a less sweet or more tart drink.
- For a sparkling version, top off the drink with sparkling water instead of still pineapple juice or hibiscus tea.
