Tomatoes and Breading

  • 4 fresh green tomatoes (room temperature, sliced into ¼-inch thick slices)
  • ¼ cup white rice flour
  • ½ cup gluten-free all-purpose flour blend
  • ½ cup cornmeal (gluten-free certified)
  • 1 teaspoon seasoned salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon ground black pepper
  • ¼ teaspoon salt
  • ¾ cup buttermilk
  • 2 teaspoons hot sauce
  • Cooking oil (canola, vegetable, or peanut) for frying (enough to fill 1½-2 inches in skillet)


Instructions

  1. Prepare the dipping sauce: Combine mayonnaise, ketchup, hot sauce, gluten-free Worcestershire sauce, garlic powder, smoked paprika, and ground black pepper in a bowl. Mix well and set aside or refrigerate until serving.
  2. Preheat oven to keep tomatoes warm: If desired, preheat oven to 200ºF and place a wire rack inside a baking sheet to keep fried tomatoes warm after cooking.
  3. Prepare tomatoes: Arrange the green tomato slices in a single layer on a baking sheet lined with a double layer of paper towels. Sprinkle with salt, top with another layer of paper towels, press lightly, and let sit for 10-15 minutes to draw out moisture.
  4. Set up breading stations: Place white rice flour on a plate. In a shallow bowl, whisk together cornmeal, gluten-free all-purpose flour, seasoned salt, smoked paprika, garlic powder, onion powder, ground black pepper, and salt. In another bowl, combine buttermilk with hot sauce.
  5. Heat oil: Pour oil into a large, heavy-bottomed deep skillet to a depth of 1½-2 inches. Heat over medium heat until oil reaches 350ºF, about 10-15 minutes. Use an instant thermometer to maintain temperature while frying.
  6. Bread the tomatoes: Lightly coat each tomato slice with white rice flour, then dip into the buttermilk mixture, letting excess drip off. Finally, coat with the seasoned cornmeal mixture using a fork to cover both sides. Place breaded slices on a baking sheet while waiting to fry.
  7. Fry the tomatoes: Just before frying, lightly coat the tomatoes again with any reserved cornmeal breading. Carefully place 3-4 tomatoes in hot oil without overcrowding. Fry for 4-5 minutes, flipping halfway through, until golden brown and crispy. Use tongs for flipping and a skimmer spoon to remove.
  8. Drain and keep warm: Transfer fried tomatoes to a paper towel-lined plate to absorb excess oil. If using, move them to the wire rack in the preheated oven to keep warm while frying remaining batches.
