Ingredients

Protein

  • 1 1/4 pounds flank steak, thinly sliced

Vegetables

  • 1 red bell pepper, cored, seeded and cut into strips
  • 1 green bell pepper, cored, seeded and cut into strips
  • 2 teaspoons minced garlic
  • 1 teaspoon minced ginger

Sauce & Seasoning

  • 1 tablespoon vegetable oil (divided use)
  • 1/4 cup soy sauce
  • 1 1/2 tablespoons sugar
  • 1 1/2 tablespoons cornstarch
  • Salt and pepper to taste
  • 1/4 cup water


Instructions

  1. Heat oil and sauté peppers: Heat 1 teaspoon of vegetable oil over medium-high heat in a large pan. Add the red and green bell pepper strips and stir-fry for 3-4 minutes until just tender. Remove the peppers from the pan and set aside on a plate.
  2. Prepare steak in pan: Add the remaining vegetable oil to the pan. Season the thinly sliced flank steak with salt and pepper. Increase heat to high and add the steak to the pan. Cook for 5-6 minutes until lightly browned, stirring occasionally to ensure even cooking.
  3. Add aromatics: Add the minced garlic and ginger to the pan with the steak. Stir-fry for about 30 seconds until fragrant.
  4. Return peppers and make sauce: Place the cooked bell peppers back into the pan with the steak mixture. In a small bowl, whisk together the soy sauce, sugar, cornstarch, and 1/4 cup water until smooth.
  5. Simmer with sauce: Pour the sauce mixture over the steak and peppers in the pan. Bring to a simmer and cook for 2-3 minutes, stirring frequently, until the sauce thickens and coats the ingredients evenly.
  6. Serve immediately: Once the sauce has thickened, remove from heat and serve the pepper steak stir fry hot, ideally over steamed rice or noodles for a complete meal.
