For the Posset
- 4 ripe peaches
- 2 cups (480 ml) heavy cream
- 1/2 cup (100 g) sugar
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
Instructions
- Prepare the peaches: Halve and pit three of the peaches. Carefully scoop out the flesh leaving the shells intact; these will be used as serving cups. Dice the fourth peach finely to use as a garnish if desired.
- Make the peach purée: Blend the scooped peach flesh together with one tablespoon of fresh lemon juice until the mixture is completely smooth. Set this purée aside for later use.
- Heat the cream mixture: In a medium saucepan, combine the heavy cream, sugar, and lemon zest. Slowly bring the mixture to just a boil over medium heat, then reduce the heat and simmer for 2 to 3 minutes. Stir continuously to ensure the sugar dissolves completely.
- Add lemon juice: Remove the saucepan from the heat and stir in the remaining one tablespoon of lemon juice. The heat will cause the mixture to begin thickening as it cools.
- Combine peach purée and cream: Whisk the prepared peach purée into the warm cream and lemon mixture until fully incorporated and smooth.
- Fill serving cups: Carefully spoon or pour the peach posset mixture into the reserved peach shells or alternatively into small ramekins.
- Chill to set: Refrigerate the filled peach shells or ramekins for at least 4 hours until the posset has fully set and reached the desired creamy texture.
- Garnish and serve: Before serving, garnish the posset with the diced peach, extra lemon zest, or fresh mint leaves for an extra touch of color and freshness.
Notes
- Use ripe but firm peaches to ensure the shells hold well when scooping out the flesh.
- The dessert can be prepared a day in advance; just store covered in the refrigerator.
- For a slightly different flavor, you can substitute lemon zest and juice with lime.
