Cobbler

Topping
- 3/4 cup biscuit baking mix
- 3/4 cup brown sugar
- 3 tbsp cold butter
- 1 cup pecans, lightly chopped
Bourbon Sauce
- 1/2 cup sugar
- 1 tbsp cornstarch
- 1/2 tsp cinnamon
- 1/3 cup bourbon
- 1½ cups fresh peaches, peeled, pitted & diced
- 1/2 tsp lemon juice
Instructions
- Preheat Oven: Preheat the oven to 325 °F and spray a 9x9 inch pan with non-stick cooking spray to prepare for baking.
- Prepare Peach Filling: In a medium bowl, combine 2 cups diced fresh peaches, sweetened condensed milk, 1 teaspoon lemon juice, and lemon zest. Mix well to combine the flavors.
- Make Cobbler Base: In a large bowl, cut the cold diced butter into 1½ cups biscuit baking mix until crumbly. Stir in the peach mixture evenly, then spread the mixture into the prepared pan.
- Make Topping: In a small bowl, combine 3/4 cup biscuit baking mix and brown sugar. Cut in the 3 tablespoons cold butter until crumbly, then stir in the chopped pecans.
- Assemble & Bake: Sprinkle the topping evenly over the peach mixture in the pan. Bake in the preheated oven for 65 to 70 minutes until the topping is golden and the filling is bubbly.
- Prepare Bourbon Sauce: While the cobbler bakes, combine sugar, cornstarch, and cinnamon in a saucepan. Stir in the bourbon and cook over medium heat until thickened, stirring frequently.
- Add Peaches to Sauce: Stir diced fresh peaches and 1/2 teaspoon lemon juice into the thickened sauce. Cook and stir until the sauce is hot and well blended.
- Serve: Serve warm peach cobbler with a generous drizzle of bourbon sauce for a decadent finish.
