Description

This delightful Peach Bread is a moist, flavorful loaf perfect for breakfast or a sweet snack. Made with fresh peaches, almond extract, and a hint of cinnamon, this bread combines fruity freshness with comforting spices. Easy to prepare and baked until golden, it’s delicious on its own or toasted with butter.

Ingredients

Fruit Mixture

  • 2 large peaches (about 300 grams peeled and chopped)
  • 1/2 tablespoon lemon juice
  • 3/4 teaspoon pure almond extract

Dry Ingredients

  • 210 g (1 and 1/2 cups) all-purpose flour
  • 2 and 1/2 teaspoons baking powder
  • 1 to 1 and 1/2 teaspoons cinnamon
  • 1/8 teaspoon salt (optional)

Wet Ingredients

  • 2 large eggs (room temperature)
  • 105 g (1/2 cup) granulated sugar
  • 115 g (1/2 cup) butter (melted and cooled)
  • 120 g (1/2 cup) milk (room temperature)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (177°C). Grease an 8 ½ by 4 ½ inch (21.5 x 10.5 cm) loaf pan and line the bottom and sides with parchment paper, leaving about 2 inches (5 cm) of overhang on each side to help remove the bread easily after baking.
  2. Prepare Peaches: Peel and chop the peaches into approximately 0.4 to 0.6 inch (1 to 1.5 cm) cubes. Place the cubed peaches into a small bowl, then stir in the almond extract and lemon juice to enhance flavor and prevent browning.
  3. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, cinnamon, and salt (if using) until evenly combined. Set aside.
  4. Mix Wet Ingredients: In a medium bowl, whisk the eggs and sugar together for about 30 seconds until just combined. Add the room temperature milk and melted butter, stirring gently to combine without overmixing.
  5. Combine Wet and Dry Mixtures: Pour the wet ingredient mixture into the bowl of dry ingredients. Gently whisk just until combined, ensuring not to overwork the batter to keep the bread tender.
  6. Add Peaches: Fold the peach mixture into the batter using a spoon, mixing until just combined to avoid breaking up the fruit.
  7. Fill Pan: Spoon the batter into the prepared loaf pan, spreading it evenly so the peaches are distributed throughout, ensuring each slice has a good amount of fruit.
  8. Bake: Bake the bread in the preheated oven for 44 to 48 minutes or until a toothpick inserted into the center comes out clean. This indicates the bread is fully cooked.
  9. Cool: Allow the bread to cool in the pan for about 30 minutes. Then lift it out using the parchment paper overhang and transfer it to a wire rack to cool completely before slicing. This helps to slice the bread neatly without it crumbling.

Notes

  • Use ripe but firm peaches to avoid excess moisture in the bread batter.
  • The almond extract can be omitted or substituted with vanilla extract if preferred.
  • Adjust cinnamon amount to taste, starting with 1 teaspoon and adding more if desired.
  • Line the loaf pan with parchment paper for easy removal and clean edges.
  • Ensure all wet ingredients are at room temperature for the best texture and even baking.
