Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (177°C). Grease an 8 ½ by 4 ½ inch (21.5 x 10.5 cm) loaf pan and line the bottom and sides with parchment paper, leaving about 2 inches (5 cm) of overhang on each side to help remove the bread easily after baking.
- Prepare Peaches: Peel and chop the peaches into approximately 0.4 to 0.6 inch (1 to 1.5 cm) cubes. Place the cubed peaches into a small bowl, then stir in the almond extract and lemon juice to enhance flavor and prevent browning.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, cinnamon, and salt (if using) until evenly combined. Set aside.
- Mix Wet Ingredients: In a medium bowl, whisk the eggs and sugar together for about 30 seconds until just combined. Add the room temperature milk and melted butter, stirring gently to combine without overmixing.
- Combine Wet and Dry Mixtures: Pour the wet ingredient mixture into the bowl of dry ingredients. Gently whisk just until combined, ensuring not to overwork the batter to keep the bread tender.
