Dressing Ingredients

- 1 tablespoon fresh basil (chiffoned)
- Salt and pepper to taste
Instructions
- Make the dressing: In a mason jar with a lid, combine fresh lemon juice, Dijon mustard, honey, olive oil, fresh basil, salt, and pepper. Shake vigorously to emulsify the dressing or use a wire whisk to blend ingredients thoroughly. Set aside.
- Prepare the lettuce: Wash and tear green leaf and Boston leaf lettuces, removing any woody stems. Tear into equal-sized bite-sized pieces for even texture.
- Slice peaches: Rinse peaches, slice them thinly, and carefully remove the pit.
- Slice cucumber: Wash the English cucumber and slice into rounds or half-moons depending on preference.
