  • 1 head green leaf lettuce (washed and torn)
  • 1 head Boston leaf lettuce (washed and torn)

Dressing Ingredients

  • 3 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 tablespoon fresh basil (chiffoned)
  • Salt and pepper to taste


Instructions

  1. Make the dressing: In a mason jar with a lid, combine fresh lemon juice, Dijon mustard, honey, olive oil, fresh basil, salt, and pepper. Shake vigorously to emulsify the dressing or use a wire whisk to blend ingredients thoroughly. Set aside.
  2. Prepare the lettuce: Wash and tear green leaf and Boston leaf lettuces, removing any woody stems. Tear into equal-sized bite-sized pieces for even texture.
  3. Slice peaches: Rinse peaches, slice them thinly, and carefully remove the pit.
  4. Slice cucumber: Wash the English cucumber and slice into rounds or half-moons depending on preference.
  5. Chop pecans: Roughly chop the raw pecans to add a crunchy texture.
  6. Crumble feta: Crumble the feta cheese to scatter over the salad later.
  7. Assemble salad: On a large serving plate or bowl, layer the torn lettuces as the base. Evenly distribute blueberries, peach slices, cucumber, chopped pecans, and crumbled feta over the greens.
  8. Dress the salad: Just before serving, pour the prepared dressing over the salad and toss gently to combine all flavors.
