Ingredients

Pea Topping

  • 1 cup frozen peas
  • Small handful of pea shoots (optional)
  • 1/4 cup grated Parmesan cheese
  • 3 tbsp olive oil
  • 1 tsp lemon juice
  • 1/2 clove garlic (save the other half for the bruschetta)
  • Salt and pepper to taste

Bruschetta

  • 6 slices ciabatta
  • 2 tbsp olive oil
  • 1/2 clove garlic
  • Additional pea shoots for garnish
  • Fresh Parmesan for garnish
  • Lemon zest for garnish
  • Black pepper for garnish
  • Extra virgin olive oil for drizzling


Instructions

  1. Make the Pea Topping: Place the frozen peas, pea shoots, grated Parmesan, olive oil, lemon juice, half a clove of garlic, salt, and pepper into a food processor. Pulse until the mixture forms a rough paste. Set aside while preparing the bread.
  2. Preheat the Broiler or Grill: Prepare your oven’s broiler or a grill by preheating it to a high temperature to toast the ciabatta slices evenly.
  3. Prepare the Bread: Drizzle the ciabatta slices evenly with 2 tablespoons of olive oil making sure each slice is well coated.
  4. Toast the Bread: Place the bread slices under the broiler or on the grill. Toast each side for 2-3 minutes until the bread is crisp and golden brown, keeping a close eye to prevent burning.
  5. Garlic Rub: Immediately after toasting and while the bread is still warm, use the remaining half clove of garlic to gently rub over the surface of each slice to infuse a subtle garlic flavor.
  6. Assemble the Bruschetta: Spread an even layer of the pea topping over each toasted ciabatta slice.
  7. Garnish and Serve: Sprinkle extra Parmesan cheese and lemon zest on top of each bruschetta. Add fresh pea shoots, drizzle with extra virgin olive oil, and finish with a crack of black pepper for added flavor.
