For the Cake Batter

Instructions
- Preheat and Prepare Pan: Preheat your oven to 375°F (190°C). Grease a 9-inch (23 cm) cake pan with olive oil and line the bottom with a parchment round to prevent sticking.
- Mix Wet Ingredients: In a mixing bowl, combine the sugar, extra-virgin olive oil, eggs, and ⅔ cup of passion fruit curd. Stir thoroughly until the mixture is completely homogeneous.
- Add Dry Ingredients: Sift together the all-purpose flour, salt, and baking powder into the wet ingredients. Stir gently just until combined, taking care not to overmix so the cake remains tender.
- Assemble Cake: Pour and scrape the batter into the prepared cake pan, smoothing the surface evenly. Spoon the remaining ⅔ cup passion fruit curd evenly across the top in about 12 dollops. Using the back of a spoon, drag through the cake batter in figure-eight motions to create delicate swirls. Avoid overswirling to maintain the cake’s texture.
- Bake the Cake: Bake the cake for approximately 30 minutes, or until a toothpick inserted into the center (avoiding the passion fruit swirls) comes out clean. Remove from the oven and let it rest for about 3 minutes in the pan.
- Cool and Remove: Run a knife around the edges to loosen the cake. Invert the cake onto a parchment-covered plate, peel off the bottom parchment carefully, then invert again onto a wire rack. Remove the top parchment and allow the cake to cool fully before slicing and serving.
