Description

  • 1 (15 oz) jar roasted artichokes, drained (or store-bought marinated, drained)
  • 1 (15 oz) can white cannellini beans, rinsed and drained
  • 1/2 lemon, juiced and zested (about 1 tablespoon juice)
  • 2 tablespoons olive oil
  • 2 teaspoons fresh thyme leaves
  • 2 teaspoons fresh oregano leaves
  • 2 teaspoons fresh basil leaves
  • 1/4 teaspoon salt
  • Black pepper, to taste
  • 2 cloves garlic, minced
  • 1/2 cup Italian cheese blend (Trader Joe's Quattro Formaggio or similar)


Instructions

  1. Combine Base Ingredients: Place the roasted artichoke hearts, rinsed white cannellini beans, lemon juice and zest, olive oil, thyme, oregano, basil, salt, pepper, and minced garlic into a 7-cup food processor or blender. Pulse until the mixture is well combined but still retains some texture.
  2. Add Cheese and Blend: Add the Italian cheese blend to the processor and pulse again until the dip is smooth and creamy, ensuring the cheese is fully incorporated.
  3. Chill and Serve: Transfer the dip to a serving or storage bowl, cover, and refrigerate for up to two days before serving. Serve the dip chilled with your choice of crackers, bread, or fresh vegetables.

  • The dip can be made up to two days in advance and kept refrigerated.
  • For a smoother texture, blend longer, or for more texture leave it slightly chunky.
  • Substitute fresh herbs with dried herbs if fresh are unavailable, reducing quantities to 1 teaspoon each.
  • Use a high-quality Italian cheese blend for best flavor, or substitute with freshly grated Parmesan and Pecorino Romano.
