Small potatoes are boiled until tender, then smashed flat, seasoned with garlic and herbs, drizzled with olive oil and butter, and roasted until golden and crispy. Finished with a generous sprinkle of freshly grated Parmesan cheese and fresh parsley, this recipe delivers a delightful combination of textures and flavors that will please everyone at the table.


Ingredients

Potatoes

  • 2 pounds small yellow and/or red potatoes

Seasoning & Oil

  • 2 tablespoons olive oil (divided)
  • 2 tablespoons butter (melted)
  • 1 teaspoon kosher salt
  • 1 teaspoon granulated garlic or garlic powder
  • ½ teaspoon freshly ground black pepper

Cheese & Herbs

  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh Italian parsley (divided)


Instructions

  1. Preheat Oven and Boil Potatoes: Preheat your oven to 425°F (220°C). Place the potatoes in a pot and cover with water. Bring the water to a boil, then cook the potatoes until they are fork-tender, about 15 minutes. Once cooked, drain the potatoes thoroughly.
  2. Prepare Potatoes on Baking Sheet: Coat a baking sheet with 1 tablespoon of olive oil. Using tongs, transfer the hot potatoes to the oiled baking sheet. Using the back of a heavy measuring cup, gently smash each potato until about ¼ inch thick.
  3. Season and Oil Potatoes: Drizzle the smashed potatoes generously with the remaining tablespoon of olive oil and the melted butter. Sprinkle evenly with the kosher salt, granulated garlic or garlic powder, and freshly ground black pepper. Add about a teaspoon of the chopped parsley across the potatoes.
  4. Roast Potatoes: Place the baking sheet in the preheated oven and roast the potatoes for 30 minutes, or until the edges are browned and crispy.
  5. Add Parmesan and Continue Roasting: Remove the potatoes from the oven and evenly sprinkle the freshly grated Parmesan cheese over the top. Return the potatoes to the oven and roast for an additional 5 minutes, allowing the cheese to melt and slightly brown.
  6. Finish and Serve: Take the potatoes out of the oven and sprinkle the remaining fresh parsley generously over them. Serve the Parmesan Smashed Potatoes warm as a delicious side dish.
