  • 2 lbs red potatoes (washed)
  • Nonstick cooking spray


Instructions

  1. Prepare the Butter: Add 1 stick of butter to a 9x13 baking pan.
  2. Preheat the Oven: Place the baking pan with butter into a cool oven. Turn the oven on to 400°F (204°C) and let the butter melt as the oven preheats.
  3. Cut the Potatoes: While the butter is melting, cut the red potatoes in half and score each potato by making shallow cuts on the surface to allow seasoning to penetrate.
  4. Mix Seasoning: In a small bowl, combine grated Parmesan cheese, 2 tablespoons of herb seasoning, salt, and black pepper. Mix well to create the seasoning blend.
  5. Season the Pan: Remove the baking pan from the oven once the butter has melted. Sprinkle the Parmesan and herb seasoning mixture evenly onto the bottom of the pan with the melted butter.
  6. Arrange Potatoes: Place the cut side of the potatoes down onto the seasoned butter in the baking pan, arranging them in a single layer.
  7. Add Final Seasoning: Spray the tops of the potatoes lightly with nonstick cooking spray and sprinkle with the remaining 1 tablespoon of herb seasoning to enhance the flavor.
  8. Bake: Bake the potatoes uncovered in the preheated oven for 40 minutes, or until they are tender and golden brown on the edges.
