Ingredients
Steak
- 2 lbs New York Strip Steaks (2 steaks) (or Ribeye or Top Sirloin Steaks, 1 lb each, 1 1/4” thick)
Seasoning and Cooking
- 1/2 Tbsp vegetable oil (or any high heat cooking oil like canola or extra light olive oil)
- 1 1/2 tsp sea salt
- 1 tsp black pepper (freshly ground)
Garlic Butter Sauce
- 2 Tbsp unsalted butter
- 2 cloves garlic (peeled and quartered)
- 1 sprig fresh rosemary
Instructions
- Prepare the Steak: Thoroughly pat the steaks dry using paper towels to remove any excess moisture. Just before cooking, season both sides generously with 1 1/2 teaspoons of sea salt and 1 teaspoon of freshly ground black pepper.
- Heat the Pan & Sear: Heat a cast iron pan over medium-high heat until very hot. Add 1/2 tablespoon of vegetable oil and swirl to coat the pan evenly. Place the steaks in the skillet and sear the first side for 4 minutes to create a brown crust. Flip and cook the other side for 3 to 4 minutes. Then, use tongs to hold the steak on its sides to render fat and sear the edges for about 1 minute per edge.
- Add Garlic Butter & Herbs: Reduce heat to medium. Immediately add 2 tablespoons of unsalted butter, the quartered garlic cloves, and a sprig of fresh rosemary to the pan. Continuously spoon the melted butter over the steaks while tilting the pan to baste thoroughly. Continue basting for about a minute or until the steak’s internal temperature is about 5-10 degrees below your desired doneness, as it will continue cooking while resting.
- Rest and Serve: Transfer the steaks to a cutting board and loosely cover with foil. Let rest for 10 minutes to allow the juices to redistribute. Slice the steaks into 1/2 inch strips and serve, spooning any remaining garlic butter sauce over the top for extra flavor.
