Instructions

  4. Add liquids and rice: Pour in the chicken stock and undrained diced tomatoes. Add the long-grain rice. Increase the heat slightly and bring the mixture to a gentle simmer for 2-3 minutes, scraping the bottom of the skillet to loosen any browned bits for extra flavor.
  5. Simmer covered: Move the skillet to the smallest burner and reduce the heat to low. Cover the skillet with the lid, and cook without lifting the lid for 20 minutes, allowing the rice to absorb the liquid and flavors.
