Description

This No-Oven Turkish Bread (Bazlama) recipe offers a simple and authentic way to make soft, fluffy flatbreads using just a few common ingredients and a stovetop pan. Perfect for those who want traditional Turkish flavors without the need for baking, this bread is cooked on a pan until puffed and golden, resulting in a delicious, versatile bread great for dipping or filling.

Ingredients

Dough Ingredients

  • 500 g Bread flour or all-purpose flour (4 cups)
  • 160 ml Warm milk (2/3 cup)
  • 160 ml Warm water (2/3 cup)
  • 10 g Instant dry yeast (1.5 tbsp)
  • 10 g Sugar (1 tbsp)
  • 8 g Salt (0.8 tbsp)

Finishing

  • 20 g Melted unsalted butter (or olive oil)
  • Chopped parsley (optional, for garnish)

Instructions

  1. Activate yeast: Pour warm milk, warm water, sugar, and yeast into a container and mix well to combine and activate the yeast.
  2. Make the dough: Add flour and salt into the yeast mixture. Mix thoroughly, then knead by hand until the dough is no longer sticky and the surface is smooth, which typically takes about 8-10 minutes.
  3. Proof the dough: Cover the dough and let it rest in a warm place for about 1 hour or until it doubles in size.
  4. Divide and shape: Divide the risen dough into 6 equal pieces. Shape each piece into a round ball and cover them with plastic wrap or a plastic bag to prevent drying.
  5. Roll out the dough: Using a rolling pin, press each ball into a round flatbread approximately 18 cm in diameter and about 5 mm thick.
  6. Prepare the pan: Heat a thick-bottomed pan or skillet over medium heat on the stove. A thick pan is preferred as it retains heat better and helps the bread rise.
  7. Cook the bread: Place one rolled dough round onto the hot pan. Cook until many bubbles form on the surface, then flip to the other side. The bread should puff up like a balloon.
  8. Adjust heat and cover: Once the bread puffs, reduce the heat to low and cover the pan with a cloth to keep the bread moist and prevent drying while cooking through.
  9. Finish cooking: Cook until both sides are golden brown and the bread is fully cooked inside.
  10. Serve: Brush the cooked bread with melted butter or olive oil and sprinkle with chopped parsley if desired. Enjoy warm.

Notes

  • Use warm liquids to help activate the yeast properly.
  • Do not use a thin pan, as it may prevent the bread from rising and puffing up.
  • Covering the bread while cooking helps retain moisture and prevents cracking.
  • Serve fresh and warm for best texture and flavor.
  • Optional: Add herbs or garlic butter for extra flavor during the finishing touch.
