  • 1 cup strawberries (sliced)
  • 2 teaspoons lemon juice
  • 2 tablespoons vanilla protein powder
  • ¼ teaspoon xanthan gum
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup (or monk fruit for lower sugar)


Instructions

  1. Blend: Add all ingredients into a high-speed blender, except any optional mix-ins. Sprinkle the xanthan gum evenly over the top before blending to prevent clumping. Blend the mixture for 30 to 45 seconds until it becomes completely smooth. Allow the mixture to sit for 1 to 2 minutes so any foam can settle.
  2. Freeze: Pour the blended mixture into the Ninja Creami pint container, stopping just below the MAX FILL line. Place the container on a level surface in the freezer and freeze the mixture for at least 24 hours to ensure it is fully solidified.
  3. Spin: Insert the frozen pint into the Ninja Creami machine and select the “Lite Ice Cream” function to process the mixture into creamy ice cream. If the texture is crumbly after the first spin, add 1 tablespoon of milk to the pint and press “Re-Spin” to improve creaminess.
  4. Mix-Ins (Optional): If you desire, create a small well in the ice cream and add crushed graham crackers or your favorite mix-ins. Run the “Mix-In” function on the Ninja Creami to evenly incorporate these additions. Serve immediately and enjoy your homemade strawberry ice cream!
