Perfect for a refreshing, high-protein dessert that’s both easy to make and satisfying.
Ingredients
Main Ingredients
- 1 cup frozen blueberries
- 1/4 cup sugar or monk fruit sweetener
- 1 cup low fat cottage cheese
- 1/4 cup 2% milk
- Optional: additional 2 tablespoons sugar or monk fruit sweetener
Instructions
- Thaw Blueberries: Combine frozen blueberries and sugar or monk fruit sweetener in a small, microwave-safe bowl. Microwave in 30-second increments, stirring after each, until the berries are thawed and have released their juices, which helps bring out their natural flavor.
- Blend Ingredients: Pour the thawed blueberries with their juice into a large liquid measuring cup or small mixing bowl. Add the cottage cheese and 2% milk. Use an immersion blender to blend the mixture until it becomes smooth and creamy.
- Adjust Sweetness: Taste the blended mixture, and if additional sweetness is desired, add 2 tablespoons of sugar or monk fruit sweetener. Stir or blend again to combine thoroughly.
- Freeze Mixture: Transfer the mixture into a Ninja Creami pint container and securely close its lid. Place the container on a level surface in the freezer and leave it for at least 24 hours to freeze completely.
- Prepare for Creami Processing: Remove the pint container from the freezer and take off the lid. Insert the container into the outer bowl of the Ninja Creami apparatus, secure the lid, and lock the unit into the machine.
- Process Ice Cream: Select and press the Lite Ice Cream button on the Ninja Creami machine. Allow the cycle to run fully to achieve a creamy texture.
- Check and Re-spin if Needed: Remove the ice cream from the machine and check its consistency. If it is powdery or crumbly, put the pint back in the machine and use the Re-spin function. For persistent crumbliness, add one tablespoon of milk or water and re-spin once more until creamy.
Notes
- Using monk fruit sweetener makes this recipe lower in sugar and suitable for those avoiding added sugars.
- Ensure the mixture is frozen solid for at least 24 hours before using the Ninja Creami for best results.
- Add liquids sparingly during re-spin to avoid thinning out the ice cream.
- Low-fat cottage cheese provides a creamy texture while keeping calories and fat lower than traditional ice cream bases.
