Ingredients
Main Ingredients
- 2 red bell peppers, washed
- 1 cup toasted walnuts
- 2 tablespoons pomegranate molasses
- 3 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 1 large garlic clove, minced
- 1 1/2 teaspoons cumin
- 3/4 teaspoon salt
- 1/2 teaspoons aleppo pepper flakes
- 1/2 cup bread crumbs
Optional Garnish
- Pomegranate seeds
- Flat parsley
- Pomegranate molasses (for drizzling)
Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and for easier cleanup.
- Prepare Peppers: Slice the red bell peppers in half lengthwise, removing the core and seeds. Brush both the insides and outsides of the peppers with olive oil, then place them cut side down on the prepared baking sheet.
- Roast the Peppers: Bake the peppers for about 30 minutes or until they develop some char marks and have released most of their moisture. This roasting imparts a smoky depth to the flavor. Remove from the oven and let them cool to room temperature.
- Blend Ingredients: In a food processor or high-speed blender, combine the roasted red peppers, toasted walnuts, pomegranate molasses, lemon juice, olive oil, minced garlic, cumin, salt, and Aleppo pepper flakes. Pulse the mixture until it resembles coarse sand, retaining some texture for an enjoyable bite.
- Incorporate Bread Crumbs: Transfer the blended mixture to a bowl and gently stir in the bread crumbs to bind the dip and give it slight body.
- Garnish and Serve: Garnish with a drizzle of pomegranate molasses, a sprinkle of pomegranate seeds, and a sprig of flat parsley. Serve with chopped carrots, cucumbers, crackers, or pita bread for a refreshing and flavorful appetizer.
Notes
- You can toast walnuts in a dry skillet over medium heat for 5-7 minutes until fragrant if they are not pre-toasted.
- Adjust Aleppo pepper flakes according to your spice preference; substitute with mild chili flakes if unavailable.
- For a gluten-free version, substitute bread crumbs with gluten-free bread crumbs or omit entirely.
- To enhance the smoky flavor further, you may char the peppers directly over a gas flame before roasting.
- This dip can be stored in an airtight container in the refrigerator for up to 4 days.
