Instructions

  1. Heat oil and scramble eggs: Heat 1 tablespoon of vegetable oil in a large skillet over high heat. Add the whisked eggs and scramble them until fully cooked. Transfer the scrambled eggs to a plate and set aside.
  2. Sauté aromatics: Heat the remaining 1 tablespoon of vegetable oil in the skillet. Add the minced ginger and garlic, cooking for about 1 minute until fragrant.
  3. Cook vegetables: Add the chopped Napa cabbage and sliced shiitake mushrooms to the skillet. Cook for approximately 5 minutes, stirring occasionally, until the cabbage is wilted and vegetables are tender.
  4. Add sauces and oils: Stir in the soy sauce, hoisin sauce, and sesame oil to the vegetables, mixing well to coat evenly.
  5. Combine chicken and eggs: Add the shredded cooked chicken and scrambled eggs back into the skillet. Cook for an additional 2 minutes, stirring frequently, until the chicken is heated through and all ingredients are well combined.
  6. Serve: Serve the Mu Shu Chicken over cooked white rice or spoon the filling into warmed flour tortillas. Garnish with sliced scallions and extra hoisin sauce if desired for added flavor.
