  • ½ cup (120 grams) buttermilk, room temperature
  • ⅓ cup (60 grams) rainbow sprinkles

Buttercream Frosting

  • 4 tablespoons (56 grams) unsalted butter, room temperature
  • 2 cups (225 grams) powdered sugar
  • ⅓ cup (85 grams) heavy cream (for a thicker frosting) or milk (for thinner)
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • Pinch of salt
  • Optional: A few drops of lemon or lime juice (or white vinegar) to cut sweetness; add to your preference


Instructions

  1. Prepare the pans and preheat oven: Preheat your oven to 350°F (175°C) and grease three 4-inch cake pans thoroughly to prevent sticking.
  2. Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and kosher salt. Set aside for later use.
  3. Mix wet ingredients: In another bowl, whisk melted and cooled butter with granulated sugar, vanilla extract, almond extract, and canola oil for about 2 minutes until combined.
  4. Add egg: Stop mixing, add the room temperature egg, and beat again for about 1 minute until well incorporated.
  5. Combine dry and wet ingredients: Add half of the dry mixture and half of the buttermilk to the wet ingredients. Mix for approximately 45 seconds to combine, then repeat with the remaining dry ingredients and buttermilk.

  10. Adjust sweetness: Taste the frosting and add a few drops of lemon or lime juice or white vinegar to cut the sweetness if desired, mixing briefly to combine.
  11. Assemble cake layers: Place a small dollop of buttercream on a cake circle to act as glue. Position the first cake layer on top, then pipe or spread about one-third of the frosting evenly over this layer.
  12. Add second layer: Place the second cake layer on top of the frosted one, adding more frosting between layers to fill gaps as needed.
  13. Add final layer and crumb coat: Place the third cake layer on top and pipe a thick layer of frosting over the entire cake sides and top for a crumb coat.
  14. Smooth cake frosting: Use a cake scraper or the back of a bench scraper against the cake's side and gently rotate the cake to smooth out bubbles and imperfections. Continue until the surface is even and smooth. Use an offset spatula to push excess frosting on top toward the center.
