Ingredients

Egg Mixture

  • 6 large eggs
  • ½ cup bacon, diced
  • ½ cup green onions, sliced
  • 6 cherry tomatoes, sliced in half
  • 5 oz. fresh spinach
  • 1 cup Swiss cheese, grated
  • ½ cup heavy cream
  • ½ cup whole milk
  • ½ tsp. Italian seasoning
  • ½ tsp. salt
  • ½ tsp. pepper

Pastry and Cooking Supplies

  • 1 sheet puff pastry
  • 1 tsp. butter or cooking spray (for greasing cupcake tin)
  • 1 tbsp. olive oil


Instructions

  1. Prepare Vegetables and Cheese: Slice and dice the green onions and bacon. Slice cherry tomatoes in half and grate Swiss cheese.
  2. Cook Spinach: Heat olive oil in a skillet and sauté fresh spinach for 3-5 minutes until wilted. Chop the cooked spinach into small pieces.
  3. Prepare Puff Pastry Cups: Preheat the oven to 375°F. Roll out puff pastry on a flat surface and cut into 3-inch disks using a cup or glass. Grease a cupcake tin with butter or cooking spray, place pastry disks into the cups, pressing them up the sides.
  4. Bake Pastry Shells: Bake the pastry cups for 5 minutes, then remove and press down the pastry with a spoon. Return to oven and bake for an additional 3 minutes, keeping the oven on.
  5. Mix Egg Filling: In a large bowl, beat eggs. Add green onions, cooked bacon, Swiss cheese, chopped spinach, heavy cream, milk, salt, pepper, and Italian seasoning. Mix thoroughly.
  6. Assemble Quiches: Use a slotted spoon to strain the egg mixture, distributing the solids evenly into the pastry cups. Pour the remaining egg liquid into the cups. Top each with a cherry tomato half placed in the center.
  7. Bake Quiches: Bake in the oven for 30 minutes until the quiches are set and lightly golden. Allow to cool briefly before serving.
