Ingredients

- 1/2 onion, diced
- 1 lb. ground beef
- 14 oz diced tomatoes, undrained
- 1 cup fire roasted corn kernels, drained

- 1/4 cup taco seasoning (about 1 or 2 packets)
- 3/4 cups white long grain rice, uncooked

- 2 cups beef broth

Instructions
- Sauté the onion and brown the beef: Cook the diced onion in a large skillet over medium heat for 1 to 2 minutes until softened. Add the ground beef and use a wooden spoon to break it up, cooking until no longer pink. Drain and discard fat from the skillet, then return the skillet to the heat.
- Add the seasoning and ingredients for the rice: Stir in the taco seasoning, undrained diced tomatoes, drained corn kernels, uncooked white rice, and beef broth. Mix everything together until combined.
- Simmer the mixture: Bring the skillet contents to a gentle boil. Reduce the heat to low, cover the skillet, and let it simmer for 20 minutes. At the 10-minute mark, stir the mixture to prevent sticking and ensure even cooking.
- Melt the cheese on top: After simmering, stir the mixture once more and sprinkle the shredded colby jack cheese evenly over the top. Cover again and cook on low heat for another 3 minutes or until the cheese is fully melted.
- Add your favorite toppings and serve: Remove from heat and garnish the skillet with sour cream, diced avocado, sliced black olives, chopped cilantro, and salsa as desired. Serve immediately and enjoy!
