Instructions
- Clean the leeks: Trim the dark green tops and root ends from the leeks. Slice crosswise into 1-inch pieces, trimming away any tough or dirty outer rings. Soak the sliced leeks in cold water for several minutes to remove grit, then lift out and pat dry thoroughly.
- Prep the oven and baking dish: Preheat your oven to 325°F and position a rack in the top third. Butter a small 1 to 1 ½-quart baking dish and season it lightly with kosher salt and black pepper. Place the dish on a baking sheet to catch drips and set aside.
- Sear the leeks: Heat enough neutral oil in a small skillet over medium heat to lightly coat the bottom. Arrange the leeks in a single layer, cut side down, and cook for 4-5 minutes until golden. Flip the leeks and cook the other cut side for another 4-5 minutes. Transfer the leeks to the prepared baking dish, arranging them flat with seared sides facing up and down, leaving space between pieces.

Lower the heat to medium-low and stir in the heavy cream, Dijon mustard, and fresh thyme leaves. Season with about ½ teaspoon kosher salt and black pepper to taste. Simmer for 2-3 minutes until the sauce thickens slightly and coats the back of a spoon, avoiding boiling to prevent separation.
- Assemble and braise: Pour the cream sauce over the leeks in the baking dish until nearly covering but not fully submerging the leeks. Cover the dish tightly with foil and bake in the oven for 35-40 minutes until the leeks are very tender and fork-tender.
- Optional broil finish: Remove the foil and sprinkle the grated Parmesan over the top. Turn your broiler to high and broil for 3-5 minutes until the cheese is bubbly and golden brown.
