Ingredients
Marinade

- Zest of 2 lemons

- ½ teaspoon red pepper flakes

- 2 lb large shrimp (peeled and deveined)

Instructions
- Prepare the Marinade: Combine the extra virgin olive oil, lemon zest, minced garlic, chopped fresh parsley, oregano, paprika, coriander, and red pepper flakes in a small bowl. Stir well to blend all the flavors. Reserve 2 tablespoons of this marinade separately for use after grilling.
- Season the Shrimp: Pat the shrimp dry with paper towels to remove excess moisture. Season them evenly with kosher salt. Place the shrimp in a large bowl and pour the remaining marinade over them. Toss gently to coat all shrimp thoroughly.
- Marinate the Shrimp: Cover the bowl with plastic wrap and refrigerate the shrimp for 20 to 30 minutes to allow the flavors to infuse. Avoid marinating longer to prevent the shrimp from becoming mushy.
