  • 1 1/2 cups (240 grams) diced ripe mango
  • 1/2 cup (100 grams) canned corn, drained
  • 1/2 jalapeño, finely diced, seeds removed
  • 1/4 cup loosely packed cilantro, chopped
  • 1 medium garlic clove, minced
  • 1 lime, zested and 2 tablespoons of the juice
  • Pinch of salt


Instructions

  1. Prepare Mango and Vegetables: Dice the mango into small bite-sized pieces and place them in a mixing bowl. Add the drained canned corn, finely diced jalapeño with seeds removed, chopped cilantro, minced garlic, and a pinch of salt.
  2. Add Lime Zest and Juice: Zest the lime and squeeze out the juice. Add the lime zest and 2 tablespoons of lime juice to the bowl containing the mango and other ingredients.
  3. Mix and Season: Thoroughly mix all the ingredients together. Taste the salsa and adjust the seasoning with additional salt or lime juice if desired.
  4. Store Properly: Transfer the salsa to an airtight container and refrigerate. It stays fresh for up to 2 days, allowing flavors to meld beautifully.
