Ingredients

Brownie Base

  • 10 tablespoons unsalted butter
  • 2/3 cup + 1/4 cup semi-sweet chocolate chips
  • 1/4 cup dark cocoa powder
  • 1/2 cup dark brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 large egg yolk
  • 1 tablespoon vanilla extract
  • 2/3 cup + 1 tablespoon all-purpose flour
  • 1 teaspoon espresso powder
  • 1/2 teaspoon salt

Instructions

  1. Prepare Baking Pan and Oven: Line an 8x8 inch square metal baking pan with parchment paper, covering all four sides to allow easy removal of the brownies. Preheat your oven to 350°F (180°C).
  2. Melt Butter and Chocolate: In a heat-safe bowl, melt the butter together with 2/3 cup plus 1/4 cup semi-sweet chocolate chips until smooth and fully combined. Stir in the dark cocoa powder until mixed evenly. Set this mixture aside to cool slightly.
  3. Mix Sugars and Eggs: In a separate large bowl, whisk together the dark brown sugar, granulated sugar, eggs, egg yolk, and vanilla extract until the mixture is light and smooth. Carefully whisk in the cooled melted butter and chocolate mixture until just combined.
  4. Fold in Dry Ingredients and Add-ins: Gently fold the all-purpose flour, espresso powder, and salt into the wet mixture until the batter is just about combined. Next, fold in 3/4 cup of M&M's and the chopped semi-sweet chocolate or chocolate chips, being careful not to overmix.
  5. Fill Pan and Add Topping: Pour the brownie batter into the prepared baking pan, spreading it evenly. Scatter additional M&M's evenly over the top for a colorful, crunchy finish.
