Description

These Lucky Charm Cookies are a delightful twist on traditional sugar cookies, loaded with colorful marshmallows and creamy white chocolate chips. Perfectly soft and chewy with playful pops of sweetness, they're a fun treat that brings nostalgia and joy to any occasion. Easy to prepare and bake, these cookies will quickly become a favorite in your cookie jar.

Ingredients

Cookie Base

  • ½ cup butter, softened to room temperature (1 stick)
  • ¼ cup sugar
  • ¾ cup light brown sugar
  • 1 egg
  • 1 tsp vanilla extract

Dry Ingredients

  • 1 ½ cups all-purpose flour (210 grams), spooned and leveled
  • ¾ tsp baking soda
  • ½ tsp sea salt

Add-ins

  • 1 cup white chocolate chips
  • 1 cup cereal marshmallows (Lucky Charms or other brand), plus more for topping

Instructions

  1. Cream Butter and Sugars: In a mixing bowl, cream together the softened butter, sugar, and light brown sugar until the mixture is light and fluffy, about 3 to 5 minutes. This step incorporates air, giving the cookies a soft texture.
  2. Add Egg and Vanilla: Beat in the egg and vanilla extract until fully incorporated, ensuring the mixture is smooth and homogeneous.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and sea salt to evenly distribute all dry components.
  4. Combine Wet and Dry: Gradually add the dry ingredient mixture to the wet mixture about one-third at a time, beating until just combined after each addition to avoid overmixing.
  5. Fold in Marshmallows and White Chocolate Chips: Gently fold in the cereal marshmallows and white chocolate chips with a spatula. Be careful not to stir too vigorously to prevent the marshmallows from breaking down. Optionally, chill the dough for 15 to 30 minutes to firm it up for easier handling.
  6. Shape Cookies: Using a 1.5 tablespoon cookie scoop or hands, form dough balls and place them evenly spaced on a parchment-lined baking sheet. Optionally, press extra marshmallows on top of each cookie for decorative effect.
  7. Bake: Preheat the oven to 350°F (175°C). Bake the cookies for 8 to 10 minutes. Remove them just before they are fully golden around the edges for soft, chewy cookies. For a crispier texture, bake until the edges start to brown.
  8. Cool: Let the cookies sit on the baking sheet for 2 to 3 minutes after removing from the oven to set. Transfer them to a wire rack to cool completely before serving.

Notes

  • For extra pretty cookies, press additional marshmallows on top of each dough ball before baking.
  • To double the recipe, be sure to measure flour carefully by spooning and leveling to maintain texture.
  • Chilling the dough helps prevent spreading and makes the cookies easier to shape.
  • Watch the baking time closely to achieve your preferred cookie texture, whether soft or crispy.
