Ingredients

Base Ingredients

  • 1 ½ tablespoons olive oil
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme (or use more oregano)
  • 1 ½ teaspoons kosher salt, plus more to taste
  • Freshly ground black pepper to taste
  • 1 (5.3-ounce/150g) tube of tomato paste
  • ½ cup (120 mL) dry red wine (optional)
  • 3 cups (720 mL) vegetable broth

Lentils and Nuts

  • 1 cup (185g) red lentils, soaked for 30-60 minutes
  • ¼ cup (32g) walnuts or pecans, crushed finely

Tomatoes and Pasta

  • 1 (14.5-ounce/410g) can of crushed tomatoes or whole peeled tomatoes, crushed by hand
  • 12-16 ounces (340-454g) long, wide pasta

Finishing Touches

  • 1 tablespoon high-quality balsamic vinegar
  • Flat-leaf Italian parsley or fresh basil, chopped or slivered (optional)


Instructions

  1. Soak Lentils. Soak the red lentils in water for 30 to 60 minutes to soften them ahead of cooking. Meanwhile, prepare all other ingredients by dicing onions, mincing garlic, and crushing walnuts.
  2. Sauté Onions. Heat a large 12-inch deep sauté pan or Dutch oven over medium-high heat. Add olive oil and wait until shimmering. Add diced onions with a pinch of salt and cook, stirring occasionally, until a light brown fond forms on the pan's surface, about 5 minutes. Deglaze the pan with a few spoons of water, stirring, and continue cooking the onions with added water as needed until they become soft and golden brown, 9 to 10 minutes total.
  3. Add Garlic and Herbs. Stir in minced garlic, dried thyme, oregano, kosher salt, and freshly ground black pepper. Cook while stirring frequently for 60 to 90 seconds to release the fragrant flavors.
  4. Caramelize Tomato Paste. Add the tomato paste to the pan and cook for 2 to 3 minutes, stirring very frequently until it darkens in color and caramelizes, enriching the sauce's complexity.
  5. Deglaze with Wine (Optional). Pour in the red wine if using. Scrape up any browned bits from the bottom of the pan to incorporate their flavor. Cook for 1 to 2 minutes until the alcohol smell dissipates and the mixture thickens to a jammy consistency.
  6. Add Broth and Lentils. Pour in the vegetable broth and stir well to combine with tomato paste and browned bits. Add the soaked lentils and crushed walnuts. Bring mixture to a boil, then reduce heat to medium-low and maintain a rapid simmer. Cook uncovered for 20 minutes, stirring occasionally.
  7. Add Crushed Tomatoes and Simmer. Stir in crushed tomatoes and simmer for another 15 to 20 minutes until lentils are tender but retain a slight firmness. Stir often to prevent sticking and burning, adding water or lowering heat if needed to maintain consistency.
  8. Cook Pasta. Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook until just al dente. Reserve some pasta cooking water, then drain the pasta without rinsing to preserve starches for better sauce adhesion.
  9. Season the Sauce. Taste the bolognese sauce and adjust seasonings with additional salt and pepper if needed. Stir in balsamic vinegar to add brightness and depth of flavor. Alternatively, a pinch of sugar can be used to balance acidity.
  10. Toss Pasta with Sauce. Add the hot pasta directly to the sauce and toss well to coat all noodles. Use reserved pasta water if needed to loosen the sauce and ensure it evenly clings to the pasta. Garnish with chopped fresh parsley or basil if desired. Serve immediately.
