Instructions

  2. Combine Ingredients: To the blender, add the cashew butter, real maple syrup, lemon juice, lemon zest, vanilla extract, and a pinch of salt. Pulse or process the mixture until it forms a thick, uniform dough, ensuring all ingredients are well incorporated.
  3. Add Poppy Seeds: Either pulse in the poppy seeds in the blender until evenly distributed, or transfer the dough to a bowl and gently fold the poppy seeds in by hand to keep their texture intact.
  4. Form Energy Bites: Using a 2-tablespoon scoop, measure out the dough and roll each portion between your hands into a smooth, even ball. Continue until all dough is used.
