Instructions
- Mix dry ingredients: In a mixing bowl, combine the all-purpose flour, baking powder, poppy seeds, tapioca starch, sea salt, ground ginger, and ground cinnamon. Stir until all the dry ingredients are evenly mixed.
- Prepare wet ingredients: In a separate bowl, whisk together the almond milk, maple syrup, melted coconut oil, and vanilla extract. Add the freshly grated zest and juice of one lemon to the mixture, then whisk again until combined.
- Combine and rest batter: Pour the wet ingredients into the dry ingredients and whisk until the batter is smooth and fully incorporated. Allow the batter to rest for 10 minutes so the tapioca/starch can absorb moisture and thicken the batter. Meanwhile, preheat a non-stick skillet over medium-low heat and optionally grease it lightly with 1/2 tsp of coconut oil to prevent sticking.
- Cook pancakes: Transfer the batter to a measuring cup or container with a spout for easy pouring. When the skillet is hot, pour approximately 1/4 cup of batter for each pancake. Cook for about 2 minutes, or until small bubbles form on the surface and edges look set. Flip carefully and cook the second side for 30 seconds until golden. Repeat with remaining batter to make roughly 16 pancakes.
