Description

Lemon Impossible Pie is a delightful, custard-style dessert that beautifully combines the tartness of lemon with the sweetness of coconut. This easy-to-make pie features a creamy texture with a hint of vanilla and a golden baked top, perfect for any occasion.

Ingredients

Pie Ingredients

  • 1 ½ cup milk
  • 1 cup sugar
  • 1 cup shredded sweetened coconut
  • ½ cup salted butter (melted)
  • ½ cup all-purpose flour
  • 4 large eggs
  • ¼ cup lemon juice
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • 1 lemon (zested)

Instructions

  1. Preheat and prepare: Preheat the oven to 350℉ (175℃). Grease a 9-inch pie pan thoroughly to prevent sticking and ensure easy removal of the pie after baking.
  2. Mix ingredients: In a large mixing bowl, combine the milk, sugar, shredded sweetened coconut, melted salted butter, all-purpose flour, large eggs, lemon juice, vanilla extract, lemon extract, and lemon zest. Stir gently but thoroughly until the mixture is uniformly blended.
  3. Pour into pan: Carefully pour the combined mixture into the prepared 9-inch pie pan, spreading it evenly.
  4. Bake the pie: Place the pie pan in the preheated oven and bake for about 1 hour or until the center is firm and the top of the pie achieves a lovely golden color. You can check doneness by gently shaking the pan; the filling should not be overly jiggly.
  5. Cool and chill: Remove the pie from the oven and set it on a cooling rack. Allow it to cool to room temperature completely. Once cooled, refrigerate the pie until ready to serve, as it tastes best chilled.

Notes

  • Use fresh lemon juice and zest for the best lemon flavor.
  • The pie’s texture is custard-like and creamy, so slight jiggle in the center after baking is normal.
  • Ensure the pie pan is well greased to prevent sticking since this pie does not have a crust.
  • For a more pronounced coconut flavor, consider toasting the shredded coconut lightly before mixing.
  • Store leftover pie covered in the refrigerator for up to 3 days.
