Ingredients
Ice Cream Base
- 2 cups heavy cream
- 2 cups whole milk
- 1/4 cup sugar, divided
- 1 1/2 tsp lavender extract
- 1/2 cup honey
- 6 egg yolks
Instructions
- Heat the cream mixture: In a medium saucepan, combine heavy cream, whole milk, 1/8 cup sugar, lavender extract, and honey. Stir over medium-high heat until the mixture comes to a low boil.
- Prepare the egg yolks: In a small bowl, whisk together egg yolks and remaining 1/8 cup sugar until smooth. Gradually add about 1/4 cup of the hot cream mixture into the yolks, whisking constantly to temper them.
- Cook the custard: Pour the egg yolk mixture back into the saucepan with the cream. Cook over medium heat, stirring constantly, until the custard thickens enough to coat the back of a metal spoon.
- Strain and chill: Remove from heat and strain the custard through a fine-mesh sieve into a bowl. Cover the surface directly with plastic wrap to prevent a skin from forming. Refrigerate until completely chilled.
- Churn the ice cream: Pour the chilled custard into an ice cream machine and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Freeze to set: Transfer the churned ice cream to a container and freeze for at least 7-8 hours or overnight to firm up before serving.
