Ingredients
Chicken and Marinade
- 3 pounds boneless chicken breasts, cut into 3/4 inch cubes
- 1/4 cup honey
- 3 tablespoons gluten free soy sauce (or coconut aminos for paleo)
- 3 tablespoons gochugaru chili flakes
- 1 tablespoon sesame oil
- 1 tablespoon fresh grated ginger
- 3-4 cloves garlic, minced
- 1 teaspoon sesame seeds
- Salt and pepper to taste
- Nonstick cooking spray
- 12 wooden skewers (soaked in water)
Instructions
- Prepare the Skewers: Soak 12 wooden skewers in a pan of water while prepping the ingredients to prevent burning during grilling. Preheat your grill or grill pan to medium-low heat.
- Make the Marinade: In a small bowl, whisk together honey, gluten free soy sauce, gochugaru chili flakes, sesame oil, fresh grated ginger, and minced garlic until well combined.
- Thread the Chicken: Thread the chicken cubes onto the soaked skewers. Season the skewers liberally with salt and pepper on both sides. Spray both sides of the skewers with nonstick cooking spray to prevent sticking.
- Grill the Skewers: Place the chicken skewers on the preheated grill. Grill for 2 minutes per side initially to seal in the juices.
- Apply the Glaze: Brush half of the prepared glaze over the skewers and continue grilling for 3 minutes. Flip the skewers one last time, brush with the remaining glaze, and grill for an additional 3 minutes until the chicken is cooked through and caramelized.
