Ingredients
Sauce
- 2/3 cup coconut aminos
- 1/4 cup rice vinegar
- 1 teaspoon ground ginger
- 1 tablespoon sesame oil
- 1 tablespoon red chili paste (adjust to taste)
- 3 cloves garlic, minced
Main Dish
- 1 lb ground beef
- 2.8 ounces uncooked ramen noodles
- 1 large bell pepper, thinly sliced
- 1-2 cups leafy spinach
Garnish
- Chopped scallions
- Sesame seeds
Instructions
- Make the Sticky Sesame Sauce: In a small bowl or liquid measuring cup, whisk together coconut aminos, rice vinegar, ground ginger, sesame oil, red chili paste, and minced garlic until smooth. Set aside this flavorful sauce.
- Cook the Beef: Heat a large skillet over high heat. Add a splash of oil if needed. Add the ground beef and break it up as it browns. Cook for 3–5 minutes until mostly cooked through.
- Add the Sauce: Reduce heat to medium-low and pour the prepared sauce over the browned beef. Stir well and simmer for 3–5 minutes until the sauce thickens and coats the beef.
- Cook the Noodles: While the beef simmers, bring a small pot of water to a boil. Cook the ramen noodles according to package instructions, then drain and set aside.
- Add the Veggies: Add the thinly sliced bell pepper and leafy spinach into the skillet with the beef and sauce. Cook for 1–2 minutes until the peppers soften slightly and spinach wilts.
- Assemble the Bowl: Toss the cooked noodles into the skillet. Gently mix until noodles are fully coated with sauce and veggies are evenly distributed.
- Garnish and Serve: Top the bowls with chopped scallions and sesame seeds for extra crunch and color. Serve hot and enjoy immediately.
Notes
- Adjust red chili paste amount to control spice level.
- Use a nonstick pan or add a little oil to prevent sticking when cooking lean beef.
- Serve immediately for the best texture; noodles may absorb sauce if left too long.
- Substitute ramen noodles with gluten-free noodles if needed.
- For a vegetarian option, replace ground beef with crumbled tofu or tempeh and use a vegetarian chili paste.
