Ingredients
Dry Ingredients
- 2 1/2 cups almond flour (blanched, not almond meal)
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 1/4 teaspoon salt
Wet Ingredients
- 3 tablespoons unsalted butter (chilled and chopped)
- 2 large eggs (room temperature)
- 1/4 cup milk
Optional
- 1/4 cup shredded cheese (Mozzarella recommended)
Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F). Line a large baking sheet with parchment paper and set it aside to prepare for baking.
- Mix Dry Ingredients: In a large mixing bowl, combine the almond flour, baking soda, baking powder, and salt, mixing well to evenly distribute all dry ingredients.
- Add Butter and Blend: Add the chilled and chopped unsalted butter to the dry mixture. Using a fork, blend the butter into the flour mixture until it forms a crumbly texture.
- Combine Wet Ingredients: Add the milk, room temperature eggs, and shredded cheese (if using) to the crumbly mixture. Stir gently until the dough just comes together without overmixing.
- Shape Biscuits: Drop scant 1/4 cup portions of the biscuit dough onto the prepared baking sheet, spacing them about 2 to 3 inches apart. Use a spoon to press and shape each dollop into a circular biscuit form.
- Bake Biscuits: Place the baking sheet in the preheated oven and bake for 12 minutes until the tops start turning golden brown and the biscuits are set.
- Cool and Serve: Remove from the oven and allow the biscuits to cool on the baking sheet for 10 minutes. For extra richness, brush the tops with melted butter before serving, if desired.
Notes
- Make sure to use blanched almond flour for a finer texture that resembles traditional biscuit flour.
- Room temperature eggs help the dough bind better and create a smoother texture.
- Optional cheese adds a savory flavor but can be omitted for a dairy-free version using almond milk.
- Do not overmix the dough to keep the biscuits light and fluffy.
- Biscuits can be stored in an airtight container for up to 3 days or frozen for longer storage.
