Instructions
- Desalt the Fish: Rinse the salted codfish and cut it into smaller pieces. Place in a medium pot filled with boiling water and boil for 10 to 15 minutes. Drain the fish and rinse under cold water. Taste a small piece to check for saltiness; if still too salty, repeat the boiling process until desired salt level is reached. Then shred the fish into bite-sized pieces.
- Prepare the Batter: In a medium mixing bowl, whisk together the flour, baking powder, black pepper, and Caribbean curry powder. Add the diced tomato, chopped onion, bell peppers, and prepared salted codfish. Gradually add water while mixing until the batter reaches a medium consistency, thick enough to hold together but not too stiff.
- Heat Oil: Pour cooking oil into a non-stick pan and heat over medium heat until hot but not smoking.
- Fry the Fritters: Drop generous spoonfuls of the batter into the hot oil. Fry each side for about 3 to 4 minutes or until the fritters turn golden brown and crispy. Avoid overcrowding the pan for even frying.
