Instructions

  1. Prepare the Instant Pot: Pour 1 cup of water into the bottom of the Instant Pot insert. Place the trivet inside to keep the squash elevated above the water.
  2. Prep the Squash: Prick the whole spaghetti squash all over with a paring knife to allow steam to penetrate during cooking.
  3. Pressure Cook: Place the whole squash on the trivet in the pot. Secure the lid, set the valve to 'sealing', and cook on high pressure for 20 minutes if the squash weighs around 2 lbs, or 25 minutes if closer to 3 lbs.
  4. Release Pressure: Perform a quick pressure release by carefully turning the valve to 'venting' immediately when the Instant Pot timer signals completion.
  5. Check Doneness: Carefully test the squash by inserting a paring knife. If the knife slides in easily, it is cooked through. If not, reseal the pot and cook for an additional 5 minutes.
  6. Cool and Prepare: Let the squash cool for a few minutes until safe to handle. Cut the squash in half horizontally, scoop out and discard the seeds, then use a fork to fluff out the spaghetti-like strands.
  7. Store: Transfer any leftovers to an airtight container and refrigerate for up to 4 days.
