Description

A creamy and comforting Instant Pot Rice Pudding recipe that is quick to prepare and packed with warm cinnamon and raisins. This effortless dessert uses the pressure cooking function of an Instant Pot to cook rice perfectly creamy in just minutes, making it an ideal treat for any time of day.

Ingredients

Ingredients

  • 1 cup uncooked rice
  • 2 cups milk
  • 1 cup water
  • ½ cup granulated sugar
  • 1 star anise (optional)
  • 1 teaspoon ground cinnamon
  • ½ cup raisins
  • Pinch of salt
  • 1 tablespoon unsalted butter

Instructions

  1. Combine ingredients: In the inner pot of your Instant Pot pressure cooker, combine the uncooked rice, milk, water, granulated sugar, star anise, ground cinnamon, raisins, and a pinch of salt to begin the process.
  2. Mix well: Stir everything thoroughly to ensure the cinnamon is evenly distributed and there are no large lumps remaining.
  3. Pressure cook: Close the lid of the Instant Pot and lock it into position. Press the MANUAL or pressure cook button and set the timer to 5 minutes.
  4. Natural release: After the cooking cycle finishes, allow the pressure to release naturally for about 7 minutes before manually releasing any remaining pressure.
  5. Stir and adjust: Open the lid, give the pudding a good stir to combine all flavors and textures evenly. Stir in the unsalted butter until melted. Taste and add additional sweetener if desired.
  6. Serve and enjoy: Spoon the creamy rice pudding into bowls and enjoy warm or chilled as preferred.

Notes

  • You can substitute the star anise with a vanilla bean or a teaspoon of vanilla extract for a different flavor profile.
  • For a richer pudding, use whole milk or substitute part of the milk with cream.
  • Make sure to rinse the rice before cooking to remove excess starch for a less sticky pudding.
  • Adjust sweetness after cooking as different sugars or sweeteners may vary in intensity.
  • This pudding thickens as it cools; reheat gently with a splash of milk for a creamier texture.
