Ingredients

For the Sugar Syrup

- 1 cup water (240 ml)
- 1 teaspoon lemon juice (5 ml)
- 7-8 strands saffron
- 3-4 pods cardamom, crushed
- 2 drops orange food color (may use yellow as alternative)

- Piping bag, ziplock bag, or ketchup bottle for shaping

Instructions
- Mix Dry Ingredients: Add maida, rice flour, and baking powder to a bowl and mix thoroughly.
- Add Ghee: Pour in melted ghee (or yogurt) and mix with fingers until the flour is well coated.
- Prepare Batter: Slowly add water a little at a time, mixing to form a thick, pourable batter similar to idli batter consistency. Whisk until lump-free using a whisk or immersion blender.
- Rest Batter: Cover the bowl with a lid and let the batter rest for 10-15 minutes.
- Make Sugar Syrup: In a tall pot, combine sugar and water. Heat on medium, stir occasionally.
- Add Lemon Juice: Once the mixture boils, stir in lemon juice to prevent crystallization and add tanginess.
- Add Flavorings: Add saffron strands and crushed cardamom pods, cook syrup for 2 more minutes while stirring often.

- Flip and Cook Second Side: Carefully turn them with a fork or prongs and fry until golden brown.
- Soak in Syrup: Immediately soak the fried jalebis in warm sugar syrup for about 40 seconds, flipping once; avoid over-soaking to prevent sogginess.
- Finish and Serve: Remove jalebis to a plate. Repeat cooking and soaking with remaining batter. Garnish optionally with slivered nuts or dried rose petals. Serve warm or store in an airtight container at room temperature for 1 day or refrigerated for up to 2 days.
