Instructions

  1. Simmer Cherries: Add the tart cherries along with their liquid, the lemon slice, and maple syrup into a pot. Place over low heat and bring to a gentle simmer. Let cook for 5 minutes to allow the flavors to meld and the cherries to soften.
  2. Mix Yogurt and Arrowroot: In a small bowl, combine the coconut yogurt and arrowroot starch until smooth and well incorporated. Add this mixture to the simmering soup and stir well to combine.
  3. Thicken the Soup: Continue to simmer the soup on low heat for another 2-3 minutes, stirring frequently so the arrowroot activates and thickens the soup slightly.
  4. Cool and Chill: Remove the pot from heat and discard the lemon slice. Allow the soup to cool to room temperature, then transfer it to the refrigerator to chill thoroughly.
