Ingredients

Sweet Potatoes

  • 2 medium sweet potatoes

Beef Mince

  • 1 tablespoon olive oil (or avocado oil)
  • 30 grams homemade taco seasoning (or 1 store-bought packet)
  • 500 grams lean beef mince/ground beef
  • splash of water

Toppings

  • 2 cups dairy free cottage cheese
  • 1 avocado, peeled and diced
  • 1 to 2 tablespoons hot honey


Instructions

  1. Prepare Sweet Potatoes: Wash the sweet potatoes and peel if preferred. Cut them into 2.5 cm (1-inch) cubes for even cooking.
  2. Season Sweet Potatoes: In a bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil and 1 teaspoon of taco seasoning until they are evenly coated.
  3. Air Fry Sweet Potatoes: Place the sweet potatoes in a single layer inside the air fryer basket. Cook at 200°C (400°F) for 20 minutes, shaking the basket occasionally to ensure even roasting and prevent sticking.
  4. Cook Beef Mince: While the sweet potatoes cook, heat the remaining 1 tablespoon of olive oil in a large frying pan over medium heat. Add the ground beef and use a wooden spoon to break it apart. Cook until browned thoroughly.
  5. Season Beef: Add the remaining taco seasoning and a splash of water to the browned mince. Continue cooking until the beef is fully cooked and any excess liquid has evaporated, intensifying the flavors.
