Description

This Honey Roasted Carrots recipe features tender, sweet rainbow carrots glazed with a luscious honey butter sauce and roasted to caramelized perfection. Enhanced with garlic and seasoned with sea salt and pepper, these vibrant carrots are garnished with fresh parsley or cilantro, making a delicious and colorful side dish perfect for any meal.

Ingredients

Vegetables

  • 2 1/2 - 3 lbs rainbow carrots

Glaze & Seasoning

  • 1 tbsp honey
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 pinch sea salt
  • 1 pinch ground black pepper

Garnish

  • 1 tbsp fresh parsley or cilantro, chopped

Instructions

  1. Preheat the Oven: Set your oven to 425°F (220°C) to prepare for roasting the carrots.
  2. Prepare the Carrots: Wash, trim, and slice the rainbow carrots. For thinner carrots, keep them whole or cut in half; slice the thicker ones so all pieces are roughly the same size, ensuring even cooking. Arrange the carrots evenly on a large baking sheet.
  3. Make the Honey Butter Glaze: In a small bowl, melt the unsalted butter and combine it with honey, minced garlic, sea salt, and ground black pepper. Stir thoroughly to mix all the ingredients well.
  4. Glaze the Carrots: Pour the honey butter mixture over the carrots. Using your hands or a spatula, toss the carrots gently until each piece is evenly coated with the glaze.
  5. Roast the Carrots: Place the baking sheet in the oven and roast for 25 minutes. Flip the carrots halfway through the cooking time to ensure even caramelization and roasting on all sides.
  6. Garnish and Serve: Once roasted and tender, remove the carrots from the oven and sprinkle with freshly chopped parsley or cilantro. Serve immediately or refrigerate leftovers for up to 3 days.

Notes

  • For uniform roasting, try to cut all carrot pieces to similar sizes.
  • You can substitute fresh thyme or rosemary for parsley or cilantro for a different herbal flavor.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated gently.
  • Adjust the amount of honey if you prefer a less sweet or sweeter glaze.
  • Use sea salt and freshly ground black pepper for the best flavor.
