Ingredients

Chicken and Coating

  • 1.5 lbs chicken breasts, diced very small
  • 1/4 cup flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil

Sauce

  • 1 tsp arrowroot powder or cornstarch
  • 1/3 cup reduced sodium soy sauce
  • 1/2 cup honey
  • 1 tsp sesame oil
  • 2 tbsp rice vinegar
  • 6 cloves garlic, minced
  • 1 tbsp fresh ginger or 1 tsp dried ginger
  • 1 tsp sriracha
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

  • Spicy mayo

Instructions

  1. Prepare Chicken: Cut the chicken breasts into small bite-sized pieces to ensure quick and even cooking.
  2. Coat Chicken: Place the diced chicken in a large bowl and toss thoroughly with flour, salt, and pepper until the pieces are evenly coated, which helps create a light crust when cooking.
  3. Cook Chicken: Heat a large sauté pan over medium heat and add the olive oil. Once the oil is hot, add the coated chicken pieces. Cook, stirring every minute or so, until the chicken is no longer pink in the center, about 6-7 minutes.
  4. Prepare Sauce: While the chicken cooks, whisk together the arrowroot powder (or cornstarch) and reduced sodium soy sauce in a bowl until smooth. Then stir in honey, sesame oil, rice vinegar, minced garlic, ginger, sriracha, garlic powder, and onion powder to complete the sauce.
  5. Simmer Sauce with Chicken: When the chicken is cooked through, lower the heat to medium-low and pour the prepared sauce into the pan. Stir to coat the chicken evenly and let it simmer for about 5 minutes, or until the sauce thickens to your desired consistency.
  6. Serve: Plate the honey garlic chicken over cooked rice and steamed broccoli. Sprinkle sesame seeds and drizzle with spicy mayo for added flavor and texture.
