  2. Simmer the Sauce: Bring the mixture to a boil. Once boiling, reduce the heat to low and allow it to simmer. Continue cooking for about 10 minutes or until the cranberries burst open and the sauce achieves your preferred thickness. Keep in mind the sauce will thicken further as it cools, so don’t overcook.
  3. Adjust Flavor and Cool: Remove the pot from heat. Taste the sauce; if it is too tart, add additional honey to sweeten it to your liking. Remove the rosemary sprigs and cinnamon stick to prevent overwhelming the flavor. Let the sauce cool completely.
  4. Chill the Sauce: Transfer the cooled cranberry sauce into an airtight container and refrigerate for at least 2 hours to allow flavors to meld. The sauce can be stored in the refrigerator for up to one week.
